Sue’s Rolled and Cut-Out Christmas Cookies
If you’re looking for a classic way to make the kind of cookies that your family loves to decorate, this is the recipe for you!
1 cup butter
½ cup vegetable shortening
1 ½ cups sugar
1 egg
½ tsp salt
½ tsp baking soda
¼ cup milk
4 ½ cups flour, sifted
1 tsp vanilla extract
Mix flour, salt, and baking soda
Cream butter and shortening with sugar
Add beaten egg and a small amount of the flour mixture
Add milk, remaining flour mixture, and vanilla
Roll the dough into a roll. Wrap in waxed paper and refrigerator overnight
On a floured surface, roll out a small portion of the dough at a time. Cut with cookie cutters and place onto a cookie sheet lined with parchment
Bake at 375 for 8 minutes or until golden brown
When cool, decorate with icing and sprinkles
S’mores Chocolate Cookies

2/3 cup butter
1 ½ cup brown sugar
2 eggs
1 tbsp water
1 tsp vanilla
1 ¾ cup flour
1/3 cup unsweetened cocoa
½ tsp baking soda
2 full graham crackers – crushed
12 large marshmallows, sliced in half
Preheat oven to 375
Mix butter and brown sugar until fluffy
Add eggs, water, and vanilla until blended, then add flour cocoa, and baking soda
Roll half of a handful of dough into a ball
Use your thumb to make an indentation in the dough
Dip half of a marshmallow into the crushed graham crackers
Place it into the cookie indentation and bring some of the cookie dough over the sides of the marshmallow
Place cookies two inches apart on a parchment-lined cookie sheet
Cook for 8 minutes or until cracks appear
Remove from oven and let cook on the sheet for 5 minutes
Optional: Slather the tops of each cooled cookie with Marshmallow Crème and dust with crushed graham crackers
Remove and allow to cook on a wire rack
